Healthy Vegan Doughnuts, with raw vegan chocolate glaze (baked not fried)

~ Makes 12

 

 

Ingredients:

  • 2 2/3 cups of garbanzo bean flour (gluten free and nut-free)
  • 1 tsp. Arabic gum
  • 2/3 cup coconut sugar – low GI and less processed than white sugar – this sugar is full of lovely minerals
  • 2 tsp. baking soda
  • 2 tsp. ground nutmeg
  • 1 tsp. cinnamon
  • 1 tsp. high mineral salt
  • 1 cup of soy, almond or rice milk
  • ¼ cup coconut oil
  • ½ cup apple cider vinegar
  • 1 tsp. pure vanilla extract or powder

 

 

 

Method:

  • Pre-heat oven to 375 degrees
  • Lightly grease baking doughnut trays
  • In a bowl, whisk the flour, sugar, baking soda, spices and salt
  • In a blender, mix the milk, vinegar and vanilla
  • Add wet ingredients to dry ingredients, mixing in and whisking until all the ingredients are well combined
  • Using a baking bag, pipe the mixture into the trays
  • Bake for 10-12 minutes
  • Remove from pan and allow to cool

 

Glaze:

  • ½ cup raw cacao powder
  • 2 tbs carob powder
  • ½ cup coconut oil
  • 2-3 TBS coconut nectar or raw honey
  • pinch Himalayan pink salt
  • pinch of cinnamon

 

  • Combine all ingredients in a high-speed blender
  • blend until creamy smooth and slightly warm
  • Drizzle the glaze on top of the doughnuts
  • Sprinkle with chosen sprinkles, then allow to set at room temp until hardened – living in Dubai our homes are quite warm and so you may need to pop in the fridge for 10 minutes to harden the glaze

 

Topping options:

  • Shredded coconut
  • Sprinkles
  • Dried fruit
  • Mini choc chips (vegan)

 

~ Store in air-tight containers
