Banana, Date, Walnut & Chia Bread-Cake

a combination of good fats from the oil, nuts, chia seeds and eggs, plus the natural sweet energy and potassium from the dates and bananas means that this bread-cum-cake not only tastes amazing but will provide long health benefits. Plus, as a bonus, this is gluten free!

Prep Time: 15 mins 

Cooking Time: up to 20 mins

Equipment: food processor, cake scraper, cake tin

Yield: 1 loaf / 6-8 slices

 

Ingredients:

  • 1 1 /2 cup almond meal flour
  • 2 eggs
  • ¼ cup dates (packed tightly into the measure)
  • 1 banana (save a few slices to decorate the top of the loaf)
  • 2 TBS coconut flour sugar
  • ¼ cup walnut pieces
  • 2 tbs white chia seeds
  • ¼ cup coconut oil
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch high mineral salt
  • decorate with cacao nibs – optional

 

 

Directions:

  • pre-heat oven to 200 oc
  • place ingredients in a food processor and mix until well combined into a cake batter texture
  • place in a bread / loaf (9L x 4W x 2D inch) tin that has been lined with baking paper
  • decorate top of the mix with banana slices
  • bake for 18 – 20 mins or until you have a crusty outer layer and dry inner layer (use a fork to test – it should come out dry and crumbly)
  • allow to cool and slice into 6-8 portions
    ~ will keep in the fridge in an airtight container for up to 1 week.
