I tried a version of this soup in a little cafe in North Yorkshire, UK, when I was visiting my family. I was determined to make my own version and I think this is a good effort! Try eating this with my soda bread recipe – you can even add some dates into the soda bread recipe (about 1/4 cup, chopped, for extra sweetness)-  amazing for all the family and such a quick meal to make!

Prep Time: 15 mins 

Cooking Time: 15  - 20 mins

Yield: 6 servings 

 

Ingredients:

  • 250 ml organic veg stock / roughly 1 cup
  • 1 cup water – or enough to just cover your veggies
  • 3 large sweet potatoes, sliced into large discs / chunks
  • 3 large carrots – peeled and chopped
  • 1/2    - 3/4 cup coconut creme (depends how creamy you like your soup)
  • 1 TBS Thai seasoning
  • high mineral salt and black pepper to taste – you could  add chilli pepper for a spicy version

 

Directions:

  • bring the vegetables to the boil in the veg stock and water
  • simmer until the veggies are soft
  • add the coconut cream and seasonings
  • blend with a hand blender until you have a thick and smooth soup
  • simmer for a few more minutes – entire boil and simmer process should be about 15 – 20 mins max
  • serve hot with thick slices of bread  - try my soda bread, just delicious with this soup!
